Long before pharmacy shelves were stocked with cold remedies, families simmered elderberries on the stove to create a rich, dark syrup known for its nourishing and protective properties.
Today, elderberry syrup remains one of the simplest and most effective herbal preparations you can make at home. Using dried elderberries allows you to keep the ingredients on hand year-round so you can prepare a fresh batch whenever your family needs extra immune support.

Elderberry Honey Syrup
Ingredients
• 1 cup dried elderberries
• 4 cups filtered water
• 1 cinnamon stick
• 1 tablespoon fresh grated ginger (or 1 teaspoon dried)
• 3–4 whole cloves
• 1 cup raw local honey (added after cooling)
Optional additions:
• Orange peel
• Star anise
• Lemon zest
Instructions
1. Simmer the berries
Add the dried elderberries, water, and spices to a medium saucepan. Bring to a gentle boil, then reduce heat and let simmer uncovered for 30–40 minutes.
2. Reduce and concentrate
Allow the liquid to reduce by about half. This concentrates the beneficial plant compounds.
3. Strain
Remove from heat and allow the mixture to cool slightly. Strain through a fine mesh strainer or cheesecloth, pressing the berries to extract as much liquid as possible.
4. Add honey
Once the liquid has cooled to warm (not hot), stir in the raw honey. This preserves the beneficial enzymes in the honey.
5. Store
Pour into a glass jar and store in the refrigerator for up to 2–3 weeks.

Suggested Use
Adults: 1 tablespoon daily for immune support
Children: 1 teaspoon daily
During times of illness, elderberry syrup can be taken every few hours as needed.
